Spinach and Bean Pkhali with Walnuts

Pkhali is the soul of any Georgian feast. This cold vegetable appetizer has no single strict recipe, as every home cook adds her own signature touch. My version features a more delicate flavor profile, as I deliberately avoid overpowering spices while carefully preserving the authentic Georgian spirit.

Ingredients:


  • 250g fresh spinach

  • 125g boile or canned beans

  • 100g walnuts

  • 15g garlic

  • 5g fresh cilantro or parsley

  • 6g walnut oil

  • 2g ground coriander

  • White wine vinegar, Svanetian salt, and pepper to taste
