Gluten-Free Pizza with Green Sauce, Goat Cheese and Pine Nuts

A simple and quick recipe for a healthy snack that looks like a classic pizza but contains zero flour or sugar. The base is made from pea flour, making it nutritious and light.


It cooks quickly, looks beautiful on the table, and is perfect for anyone following a healthy diet or looking to reduce calorie intake.

Ingredients:


For the crust:

  • 170g pea flour

  • 20g olive oil

  • 190g water

  • Salt and pepper to taste


For the sauce:

  • 40g arugula

  • 40g fresh basil

  • 20g Parmesan cheese

  • 60g olive oil

  • 20g pine nuts

  • 100g water

  • Ground pepper to tasteсмак


Toppings:

  • 40g semi-hard goat cheese (Goat Maasdam is recommended)

  • Fresh arugula (as needed)

  • Pine nuts (as needed)


Instructions:

Step 1. Combine all the crust ingredients in a blender or bowl and mix until completely smooth.

Step 2. Line a pizza pan or baking sheet with parchment paper and pour the mixture onto it. Season with salt and pepper. Bake in a preheated oven at 240°C for 15 minutes.
